Life, in general, is inspiring. The other night I watched the documentary Hungry for Change, and it opened my eyes even more to today’s food culture. Every morning I vow to myself that I will be a better person, and will practice what I preach- clean living and eating. I’ve gone a bit stir crazy staying away from the nightlife NYC has to offer; opting to stay in and read, watch movies, take it easy, blah blah blah….
A result of this “stir craziness” are my “stir crazy balls”, ha! They are sweet, soft, healthy and made from natural organic ingredients. Trust me when I say, “these are some good balls”. Recipe below:
2 cups almond flour
1/2 coconut flour
1 1/2 cups of fruit puree (you can find organic purees at Whole Foods and Trader Joes)
2 tbs. Cinnamon
1/2 tsp. Baking Soda
1 tsp. salt
1 tbs. Chia Seeds
2 tbs. Flaxseeds
2 cups dark chocolate shreds / chips (try and find the most natural dark chocolate you can)
Pre-Heat oven to 350F
Put all ingredients in a bowl and mix (it will be hard at first, but keep mixing until it’s soft and gooey). The mixture will appear dark due to the fruit puree.
You can spoon them onto a lined baking sheet in whatever size ball you like. Bake for 15 minutes. They should be crispy on the outside, and gooey on the inside! Just how I like to be in life… joking. Enjoy!
